The wine is made from vines chosen for their south-east exposure and their location in the middle of the hillside in order to obtain optimal maturity and a lot of complexity. The soils are rich in red clay with a marked presence of limestone. This composition gives the wine a lot of power and depth.\u003c\/p\u003e\n\n\u003cp\u003eCold pre-fermentation maceration for 7 days. Controlled fermentation – duration 16\/18 days. Punching down and pumping over allow for a gentle and thorough extraction. The aim is to achieve complete colour extraction and the presence of the most elegant tannins.
